Raw Berry Lime โCheesecakeโ cupcakes ๐๐๐ง
โจCRUST:
1 cup raw almonds or walnuts (I subbed organic flaxseeds)
3 soft medjool dates, pitted (soaked in water)
1 table spoon maple or agave syrup
1/2 tbsp coconut oil (if needed)
1/4 tbsp (cinnamon)n
โจSTRAWBERRY LIME LAYER
1 1/2 c soaked raw cashews (again we substituted organic flaxseeds)
1 lb fresh strawberries
4 limes, squeezed
1/2 cup pure maple / agave syrup
1 tsp vanilla extract
Pinch Himalayan salt โจBLUEBERRY LAYER:
1 cup blueberries
1 tbsp coconut oil โจDIRECTIONS:
Place all crust ingredients into a food processor. Lightly process, making sure not to over blend. Should look like a crumble.
Press down into a 6โ springform pan. Place in the refrigerator to set.
Blend all filling ingredients into a smooth mixture in a high power blender. Pour over crust.
Blend blueberries and coconut oil. Pour over strawberry lime layer. Garnish however you want. Chill six hours or overnight for best results. Thaw for up to an hour in fridge. Enjoy!

๐งI recently did a one-day juice detox and I'm posting this picture out of inspiration because I felt radiant as a result afterwards.
๐ฅคI personally am into juicing organic veggies and fruits everyday as part of my wellness regimen to stave off illness and aging as well as just give me an energy boost.
๐ฅฌNormally I am a mean green girl, ๐๐ฝ๐ฑ๐๐ฅ๐ฅ, but watermelon juice is a simple, delicious, and totally worthy choice.
๐Watermelon is great because it has more potassium than a banana for muscle recovery, is more hydrating than coconut water, and it has plenty of antioxidants which basically help fight free radicals (and we know that every single day is a battle in fighting free radicals and detoxing our system)!
๐ฅตOh it also maintains and boosts a healthy sex drive (natural viagra if you're a dude).

๐ฅExcellent easy recipe with protein & vital nutrition using:๐ฅฆ
๐คBaked tofu
-Cut & prepare EXTRA FIRM tofu into Cubes of desired chunks
-Toss them around in soy sauce, cornstarch or arrowroot powder (cornstarch is more processed but yields crispier results than the arrowroot powder )
-Any other seasoning of choice
-Bake under medium heat for 25-30 minutes until golden brown

๐ซ How to prepare & enjoy DELICIOUS *Raw Chocolate Peppermint Brownies!* (in 1 a minute demo)๐
(*I tripled the recipe but here is the original, to create 9 squares:)
Ingredients needed:
2 Cups (200g) Walnuts (base)
2 Cups (300g) Cashews, (will need to soak at least 1 hour)
1/2 Cup (90g) Pitted Dates (base)
4 Tbsps for base, + 2/3 cup for Topping of Cacao Powder
1/2 Cup (45g) Shredded Coconut, (filling)
1/3 Cup (80ml) for filling + 1/2 Cup(120ml) for topping Melted Coconut Oil,
1/4 Tsp Sea Salt, (filling)
1/2 Cup (120ml) for filling + 1/2 Cup (120ml) for topping Agave Syrup,
1/4 tsp Peppermint Extract, (filling)
1 Large Handful (-1.5 oz./40g) Baby Spinach,(filling)
Hemp Seeds if desired for sprinkles on topping!
Blend ingredients for base, then let set or chill for at least 10 mins!
Blend ingredients for filling, don't forget those soaked nuts (lol) to blend all together with the creamy peppermint filling! You can add the layer after like I did, they still came out phenomenal, but better off remembering! Chill/let set for another 10 mins. Then blend the topping (3 ingredients) and layer over the top of the filling, and let set or chill for 10 more minutes! Add hemp seeds if desired! (This was before I had a food processor). ENJOY!

๐ง๐ CHEEZY CAULIFLOWER PASTA!๐๐ง
Would you try this dish!? It's totally vegan friendly with the correct products but you can add whatever products you want in to customize it!
*INGREDIENTS:
Cauliflower cheese sauce:
2 Cups Steamed Cauliflower
1/4 Cup Nutritional Yeast
2 tbsp tahini
Juice of 1 lemon
1 tbsp dijon mustard
1 tbsp garlic powder
1 tbspn onion powder
1/4 tsp salt
1/2-3/4 cup veggie stock
Pasta noodles of choice
-
Cook the pasta according to the package instructions with some chopped up veggies of choice in the water too (i.e. carrot and broccoli). You can then add the sauce ingredients to a high speed blender and blend until smooth and creamy. Drain the pasta and veggies and mix through the sauce.
